BANANA BREAD

1 cup vegetable oil
2 cups flour
1 tsp. baking soda
1 cup sugar
4 large eggs
1 tsp. vanilla
½ tsp. salt
½ cup chopped nuts
½ cup raisins
5 large ripe bananas

1. Combine all of the ingredients and pour into greased and floured pans.
2. Bake at 350 degrees for 35-40 minutes.


BANANA SHAKE

2 ripe bananas, sliced
2 tbsp. honey
½ cup milk
½ cup nonfat plain yogurt
Pinch of salt
2 ice cubes

1. Put all of the ingredients into the blender and blend for about 30 seconds.
2. Pour into 2 glasses and serve cold.


EASY PEA SOUP

1 lb. Frozen peas & carrots
1 onion, chopped
2 garlic cloves, chopped
2 cups chicken broth
1-tsp. fresh grated ginger
1 stalk celery, chopped
Salt & pepper to taste
1 cup heavy cream
1 tbsp. chopped parsley

1. Add all of the ingredients except the heavy cream and parsley into a medium saucepan.
2. Bring to a boil, cover and simmer over low heat for 20-25 minutes.
3. Puree the vegetables in a blender or food processor. Add heavy cream and gently cook until the mixture is heated throughout.
4. Add the chopped parsley. Serve hot or cold.
